Artichoke Jerusalem

Jerusalem artichokes are tubers which look like knobbly potatoes. They are also called earth apples and are a species of sunflower native to eastern North America. They were first cultivated by the native Americans. Plants were taken to France in 1605 and by the mid-1600s, the Jerusalem artichoke had become a very common vegetable for human consumption in Europe.
